Pretty much everyone on the planet loves Kirby. Even if you hated fighting him, say Super Smash Bros. 64 you still loved him deeply. According to Super Smash Bros. Ultimate director Masahiro Sakurai, Kirby survived the apocalypse in the last trailer (which you can review below) because he was not "normal".
Speaking to Famitsu (as translated by Source Gaming), Sakurai says they need a "convincing reason" why Galeem, the new big villain, could be defeated by a person who would direct the indictment and eventual revolution against it , He notes that even characters with limited abilities / abilities would not be enough to defeat Galeem. Kirby was chosen for his warp star. The only other "contenders" were Bayonetta and Palutena (citing their power), but their enemies were either too strong to overcome or, from a historical point of view, it would not make sense to run away.
It's a cute argument (and a bit of pat on the back for the two), but Kirby is also much more family friendly than Bayonetta and more marketable than Palutena. When you hear how Sakurai explains as minutely as a trailer / story detail, that's why he's so big.
